I hope you've had a lovely Valentine's/Singles Awareness Day, whichever the case may be.

My day started out with an egg sandwich:

I've had a lot of these this week. Just look at the color of those eggs! These aren't just any eggs, they're Eggland's Best eggs! Trust me, these are the eggs I wish I could afford to buy all the time. The color is so much better (must be that grass) and I'm all about keeping the laying hens comfy, beak and all. Anyway, most mornings this week these kept me full long past snack time but I ate one today at about 9:30 and I was hungry by mile 2 of my run (started at 11:45 or so). Very frustrating and discouraging.

It was a hard run, even with my friend Sarah. There were several walk breaks. I was really dragging and she was happy to walk, having hurt her knee on Thursday. But I ran a total of nine miles!

I honestly didn't keep track of the walk breaks but there were five or so and I say they were a block or so each. In my defense, most of the run was on an uphill grade. We climbed a total of 800 ft on that route. Hills!! Bah. Can't get away from them in this town.

After stopping back by my apartment so she could borrow one of my dresses to wear to dinner tonight, she and I went to Your Pie for lunch! We invited Hubs, but he doesn't really like it. After running nine miles, I was perfectly happy to eat the whole 10 inch pizza. No photo because she doesn't know about the blog (I don't think) and I honestly didn't even take my phone with me. I had their whole wheat crust, marinara, mozzerella, baby 'bellas, red onion, and basil. I honestly doubt that I really even consumed that many more calories than what I burned. No guilt fast food, love it!

We then went our separate ways and I took a nap, then rolled around on the floor with my foam roller. My hips were definitely feeling that run.

After a shower and catching up with blogs (so weird to be totally caught up) Hubs and I went to Mama's Boy for dinner. Last year they had a special menu laid out for Valentine's day with muscles and rose flavored cupcakes. This year I was very disappointed to find that it wasn't the same. They had two special entrees but otherwise we were given their regular menu to order from.

We started out with a glass of merlot each, though they keep their wine bottles on top of their beverage cooler, so it was a little on the warm side. I did end up ordering one of the specials, almond crusted grouper with sweet potatoes and yu choy. I ended up subbing okra for the yu choy and was a little disappointed. Next to the seasoning on the fish and the potatoes, the okra was very bland. (sorry about the dark photos!)

Hubs originally ordered the meat loaf, but they were out, so he settled for the shrimp and grits and was very happy that he did so.

With no special desserts to choose from we opted for the molten chocolate cake (with vanilla ice cream). It wasn't exactly molten, but was nice and moist. Very tasty.

This is the first time I've been disappointed with Mama's Boyo and its a very mild disappointment at that. Both of our entrees were excellent but I was looking forward to more rose cupcakes or at least chocolate covered strawberries though.

Does anybody else get a fatal error when they try to upgrade to the latest version of WordPress? Just curious.

Well I have a lot to say and not a lot of time to say it. It's 7 minutes till bedtime, but I guess I'll stay up and fill you kids in for a bit.

Oh its been a long weekend… Lets see. Hubs and I wound up at Starbucks Saturday morning because we've got homework and we've got gift cards. Do any of your know about the fabulosity of Starbucks gift cards? If you register them on s-buck's website (and keep money on them to pay with) you get free syrups, free soy milk, free drink with a bag of coffee, and two hours of internet free a day! I lose focus well before my two hours would be up so this is so totally perfect for me! Anyway, I bought a large coffee with two pumps of white chocolate syrup and a perfect oatmeal with all the toppings. Yum! Didn't get as much studying done as I would have liked, but that's kind of the standard for this weekend.

I had coupons for 1/2 off the salad bar or hot bar at Earthfare so we used those for lunch. I got a base of spinach and mixed greens, two stuffed grape leaves, quinoa (finally!!! we agreed to buy  more next time I get a coupon requiring a purchase), a piece of tofu, kale salad (not nearly as good as what I had Last Resort), a cabbage salad, a bite of potato salad, and some shiitake soy dressing.

Hubs got a little bit of everything at the hot bar. Mac'n'cheese, some amazing sweet red pepper + goat cheese turkey meat loaf, jerk sweet potatoes, cabbage, steamed veggies, beans, and some fish. That meat loaf was seriously amazing. My favorite part (his was the sweet potatoes, so we didn't have competition :) ).

Last night's dinner was rushed, I had some leftover tofu and several handfuls of Quaker oatmeal squares. Then my friend picked me up and we went to Aromas coffee and wine bar for a girl's night! For the last year and a half we've been able to eat lunch together a few days a week, but not this semester. She's moving to Chattanooga in June so we need to really make time to see each other. It was great, this is the second time we've gone out for a drink and end up talking for 4 hours straight completely effortlessly. She's training for a marathon so we may start doing our long runs together, she'll run down to my apartment and 'pick me up' and do whatever I need to do, then run home. Awesome!

Today we had lunch planned with Hubs's father, step mother, brother, his girlfriend, grandmother, step-grandfather, and 3/4 of the family friends we spent Christmas night with. I had a grapefruit for breakfast and took some oatmeal squares on the road when I started getting hungry. We went to a Malaysian restaurant in Atlanta called Penang. I didn't realize it till we got there, but I went to the restaurant several times while I was in college! A girl down my hall took me a couple of times and it was my first time every trying tofu.

My step mother in law is Malaysian so she ordered everything family style and it was fabulous. I don't have pictures, but I can tell you (most of) what we had!

I also had a loban fruit juice which was really good. Loban is a fruit that I think is native to Malaysia. Yum! Everything was utterly fabulous but my favorites were the roti canai and lady finger belacan. But as I said, I loved it all.

And it put me to sleep… I slept almost all the way home and then continued to nap once here. I blame the rain. It also rained out my weekly long run, but I'm going to join Sarah tomorrow for eight miles on my part. Crazy!

Hubs and I seem to have an excess of pasta at the moment, so that would be what we had for dinner. I bought this wine cube at Target a month or so ago and it is really good! A zinfandel, merlot, cabernet sauvignon blend. Nice and sweet from the zin with a bit of depth from the heavier wines. Plus its four bottles worth of wine in a nice compact, recyclable container!

And dessert was another huge treat… Look what I found at Kroger! I'd seen this on Meghann's blog and a few others a month or so back and knew I had to try some when I spotted it here.

This. is. amazing. A very light tartness similar to key lime ice cream with a ribbon of clover honey to surprise you with its sticky sweetness. This is going to be hoarded and hidden and I'll be as selfish as I can be until I find more :) Love love love it. And it has probiotics!!! I'm a very happy girly.

Hopefully we can avoid any more tornado warnings tonight so I can sleep tight. I hate hearing those damn tornado sirens, but its a good thing we have them I guess. Goodnight!

So I'm going to try shifting my days around a bit… I hate showering at night and discovered on Friday (when it turned out I did actually have to go into work) that I actually have plenty of time for a quick one in the mornings without getting up any earlier than I already do. So yay! More time with my books in the evening (said books including: Biology, The End of Overeating, and Magyk the first Septimus Heap book)

I get up and immediately take the dogs out and this morning I had instructions to turn on the oven so that Hubs could later make cinnamon rolls. I had two. And coffee. Now that I have time to sip coffee at home I might make it a more regular thing. Antioxidants and all.

For my morning snack I tried Stonyfield's O'soy yogurt. It was… interesting. I'd like to start consuming probiotics again but I'm not sure that this is going to be the way I'll do it. I bought a six pack so I'll eat the rest and see if I can get used to it.

Lunch was the usual salad, but with a baby green mix this time (from Earthfare!) and green bell pepper (not organic, though its one of the dirty dozen) and goat cheese that I guess sunk to the bottom before I took this. Plus a serving of Cheddar Kashis. Yum yum yum.

We have a ton of taco shells to use so I had two for dinner. This is black beans (with a bit of reduced sodium sauce from the can, it didn't add anything so I'll drain and rinse them from now on), onion, green pepper, and cheese on a whole wheat wrap. Yes, a bit dry but I wanted to savor my salsa…

Because Newman's Own was on sale at Publix!!! (By the way, Athenians, Sunday evening is not the time to shop at the eastside Publix, they were pretty paired down produce-wise, no red bell peppers!) This is absolutely heaven in a jar:

And since its Newman's Own you know its organic. I'm going to have a cup of tea while I call my dad back and then get down to some bio reading. I'm hoping to conserve the last hour of my nights (from 8-9, I get up at 5 so I'm an early bird) for reading, half an hour for whatever non-fiction book I'm reading for fun and the last half hour for my fiction book of choice. Wish me luck!

I tried oatmeal for breakfast Sunday morning but it came out much too salty and I only ate a few bites. Awhile later I went out and ran six miles! Okay, so it wasn't continuous but I definitely ran the whole six miles (stopped my Garmin when I took a walking break). I also learned that I'm at the point where I need to start taking some form of calories with me when I run. Six miles covers a lot of ground!

I came home and ate half of this Clif bar:

After a good stretch and a shower I made myself a nice, big salad consisting of spinach, broccoli, mushrooms, goat cheese, and Ken's lite balsamic vinaigrette. I actually almost couldn't finish this and didn't eat many of the Kashi crackers I had alongside. (Like my pretty new Cali bowl? I happened to score on of Kath's free gift certificates awhile back and the two I received are the perfect size for salads-as-meals or, say, sifting dry ingredients for baking. It saw lots of use last thursday!)

After a nap I had a snack of Post shredded wheat'n'bran and roasted unsalted almonds. This helped me keep away from the cheese fries that everyone else was eating for awhile. But then everyone else had filled up on cheese fries and put off dinner, so I indulged. Over all I'm incredibly proud of how few I ate though.

The gang was mostly gathered (except Jenny, who had to work) and we had the usual burritos. It's either burritos or hamburgers when we get together and it was too cold for the grill. Dan did sauté some shrimp for a much appreciated change of pace though. I had a spinach wrap with Spanish rice, red and green peppers, sauteed onions, tomatoes, black beans, and shrimp. It was divine. I went back for some more rice, beans, shrimp, and onions but it just wasn't the same and I was full anyway so after a bite or two they were thrown out.

I managed not to overdo it on the alcohol last night, thankfully. I only had about four jello shots over the course of the evening and otherwise stuck to water (and half a can of Coke until it started tasting too sweet).

Yesterday morning I opened a new container of oats. I was using Quaker before but have switched to Kroger brand. I was hoping yesterday was a fluke but it seems not. The Kroger brand are much faster cooking which means the banana doesn't break down as much and it gelatinizes after only a few minutes. I am not a fan. I'm not really a fan of the new peanut butter I opened today either. It's not very peanut-y. I'll give it another shot tomorrow, but this may be what I get for choosing the cheapest stuff I could find.

Lunch was another big salad, the same combination as yesterday but with a few red and green peppers thrown in from last night. And I finally finished off the box of Asiago Kashis that I've been working on for ages. Not my favorite flavor, but better than the last few I tried.

I'm actually getting hungry again already. We have a bunch of apples that need to be eaten so we'll see if that will hold me over until the boys get home and I can start asking about dinner.

The bread is good, I was a sample I got months ago and have been keeping in the freezer for a rainy day. Very seedy like the sunflower seed bagel I like at Chickfila.

The Campbell's tomato soup was fairly disgusting. Way too sweet and fake tasting.

The stir fry was food, I honestly just sort of threw it together, no measurements, just a 'huh, that looks good' I ended up adding more soy sauce later. Sauteed garlic, ground ginger and red onion in olive oil then added frozen stir fry veggies, honey, and soy sauce. Once those defrosted I added some rice that was cooked earlier in the week and some sesame seeds. Let that all warm up, put it in bowls, added the same seasonings back into the pan and panfried the tofu I cooked earlier in the week to warm it up.

Most of my food lately has been saltines, to be honest. My tummy has not been happy with me and the stir fry was my first real meal since Friday lunch. And now I'm back to saltines.

Needless to say, I haven't run at all this week. Between lack of sleep leading up to what was supposed to be my first tempo run on Thursday and now the fact that I can't keep anything substantial in my system, I think we'll just call it a week off and figure out how I can catch up later.

Today I stirred my cinnamon into my oatmeal instead of just sprinkling it on top and boy what a difference it made! I got the perfect amount of cinnamon in every bite.

  • 2/3 cup water
  • 1/3 cup oats
  • 1/2 banana
  • a drop of vanilla
  • 1 tbl cinnamon?
  • palmful of granola
  • however many loose raisins I could shake out of the bag
  • a little over a tbl of peanut butter

I actually have flax that I'd love to mix in with this as well but the coffee grinder constantly has coffee grounds in it these days and I've been taking a fish oil supplement for my omega-3s anyway. It can wait in the freezer a little bit longer.

I've been using Smucker's natural honey peanut butter lately and it has dried out and is always hard from the fridge unlike any other natural style nut butter that I've tried. I also can't taste the honey at all.

I've been mildly hungry all day and I'm not really sure why, but I went with it. I had a clementine when I first started getting hungry at about 9. At about 10 I had about half of my almond/shredded wheat'n'bran mix (that's a two ounce container)

We bought roasted unsalted almonds from the bulk bins at Earthfare the other day and it's taking me a little while to get used to them. I loved my salty Blue Diamond nuts! that's what she said

coated in Ken's lite raspberry walnut dressing, courtesy of a coworker. I liked the pomegranate flavor I had, but the raspberry walnut is much less syrup like and I think I like that better.

Afternoon… I had another clementine and the rest of my nuts and cereal. I was hungry again by the time I left work but skipped another snack and headed straight out on a run. It's been in the low 40s most of the day, but with winds at 13 mph the "feels like" (is that the wind chill?) hasn't gotten above 37. My bedroom was nice and warm from the afternoon sun and I finally pulled out the nice fluffy comforter last night for the bed… Boy was it hard to convince myself to ignore it, I seriously considered just crawling into bed with my book instead changing and heading back out into the elements. Oh goodness that run was painful, but I picked up the pace a bit and averaged about 10:40s for my three miles. I knew I'd regret not going more, to quote one of my very favorite bloggers, "pain is temporary,  quitting is forever!" I could be uncomfortable for 45 minutes or so, or beat myself up for skipping it for a couple of days. I still hope not to have to repeat that any time soon though… wind, wind, go away….

Showered upon my return to thaw out! Brrr. Love my running tights but even with them my thighs were cold! I went from starting out feeling like I over dressed to finishing completely comfortable. Guess that's good.

Dinner was random. I didn't want to wait for rice to cook and didn't want to interrupt Hub's studying this morning to call and ask him to rinse, sort, and soak beans for me (no forethought, I'm telling you) so I ended up with a two egg fluff with nutritional yeast covered in salsa and corn chips.

I've been thinking about a bag of frozen peas in the freezer for a few days, so I decided to finally indulge tonight (I seem to have an unhealthy obsession with peas), doused in Mrs Dash tomato basil garlic seasoning. LOVE this combination, even if I end up smelling of garlic all night

I also had yet another HFCS laden Kroger buttermilk roll. Since I burnt the first and wasted it I told myself I couldn't have another but the smell of a nice toasty roll was lingering in the kitchen and I knew I wouldn't be able to stop thinking about it, so I toasted another one and kept a close eye out. I consider it my dessert. It actually happens a lot (more when I lived with my parents and bread was served more often with a meal) that I have bread instead of a sweet dessert. I do love it so.

Tomorrow night we're having a couple's Christmas tree event and then Hubs wants to go downtown with a friend to celebrate her being done with finals but hopefully Saturday I can get some cross training in either with a bike ride or a class at the gym, depending on the weather. I've definitely noticed a bit of weight gain that has become rather inconvenient since most of my sweaters are pretty form fitting. It's more motivation that my bank account has been to get me back to the gym. Adding in strength training will help with weight loss and also, if done correctly, greatly help reduce my risk of injury from my running! It's a win-win. Too bad I run on the only days that there are evening pilates classes. I'll just have to find something new to try!

As tempting as it may be, I can't blame the weight gain on hormone changes because I took most of a month off of exercise before the change was even made. I can blame my skin issues on it though. I was lucky in puberty and never really had an acne problem but I've definitely had more zits than ever in the past few weeks and I'm getting rather sick of them. Next time I go grocery shopping I'll have to buys some creme to see if that helps. I'll also ask the doc at my follow up in a week and a half if I can expect it to go away as my body continues to adjust. The bumps don't even bother me all that much, I just wish it didn't have to be painful!

Yes I suppose it is, lucky us! Tomorrow's my Friday again :) I'm going in for a doctor's appointment Friday morning and judging by my most recent experiences, I might require a bit more recovery than the average woman and went ahead and asked for the day off. Plus it's my mommy's birthday, an old friend is in Atlanta, and we just happen to be heading to that town Friday night for a concert with my parents anyway… Isn't it nice how things work out sometimes?

Well now that we've established what I'm looking forward to I'll briefly mention that I've had a stressful evening as relates to my baby, Rose, but I successfully got her to eat some yogurt, so things might be looking up? She's so weak she can't even stand, did I mention that? If we couldn't get her to eat tonight or tomorrow  morning I'd have to stress my already understaffed office even further by requesting time off at the last minute to take her to the vet. But she ate yogurt! How much of it was actual interest and how much just my yogurt covered finger in the right place while her tongue was licking her lips, I don't know. But it's a victory.

To be brief, there was pumpkin oatmeal for breakfast and I couldn't resist another yummy egg

I had been leaning towards spaghetti for dinner but Hubs requested fast food so that we could get to Walmart and home soon enough to get a nap before he had to go to lab. Well he didn't have time for a nap, but I got to eat at Zaxby's for the first time. I have a good friend who loves Zaxby's and could never believe I'd never eaten there. I decided to go for the chicken tender plate to try a bit of everything. And Hubs wanted both wings and chicken tenders so it might have saved a little money. I ate 3 of the 5 chicken tenders with the Zaxby's sauce, all of the crinkle fries, Texas toast, and coleslaw.

The sauce was interesting and I'm a sucker for cheap coleslaw, but I seem to be losing my taste for fried chicken. It just wasn't appealing after three tenders! The toast was lacking garlic flavoring but the fries were awesome! I think crinkle fries are tied with steak fries as my favorite.

I had been hoping to run today but knew it wouldn't happen when I hurt my back today. After spending yesterday evening with the heating pad it was feeling much better until I tried to carry a stack of books from one book truck to a cart. Ooops.

I'm exhausted. Time to shower then try to feed Rose again. Hopefully I'll have time to read a chapter of my book and still get to bed early.

… or Thank God For Heating Pads. Since Rose is so weak and already has a bit of hip displasia she has trouble standing these days, so I've been carrying her up and down the stairs. Well this morning, well away from Rose, I made some move in my office chair and pulled something in my lower back. I've done this before but I think I can confidently say that this is the worst its been. If I don't focus on supporting myself with my abs simply taking a step twerks it. Not to mention stepping down a step. That one really hurt. But after some quality time with ye olde heating pad and Dan's recliner it's feeling lovely. Yay and thank God.

Well Rose still isn't eating, so she's looking like this:

Her belly bulges because she's been spayed twice and we think they cut her abdominal muscles during the second attempt (don't ask, the story incurs a lot of eye rolling). But she's lost so much weight. I picked up a new medicine today, a 'mild appetite stimulant.' So far no good, but maybe later.

In other news most of today's eats were pretty basic. Pumpkin oatmeal with pumpkin granola and part of a pumpkin muffin for breakie (wooo, if that doesn't prove the obsession I don't know what will). Camera at the picture.

Snack was basically last week's combo of roasted almonds, cashews, and cereal. I ate half in the morning with a tangerine and the other half in the afternoon. This week's cereal of choice is Post Shredded Wheat n Bran. It is very bland, but I don't mind too much.

Lunch a spinach salad with the last of a bag of almond slices and the best hard boiled egg I've had yet. As far as I can tell it was almost verging on soft-boiled, the yolk still nice and bright and soft. It's seemed to have more flavor that way. Loved it! Boiled for 7.5 minutes then run under cold water to stop the cooking. It's so tempting to grab another out of the fridge, but I'm still satisfied from my yummy dinner.

I had been planning on making shrimp stirfry with cashew rice since I have a whole batch of rice that Rose won't eat. After hurting my back I didn't much want to be standing in the kitchen cooking so I took some of the brown rice, about a third of a can of light kidney beans (drained and rinsed), and some Mrs Dash tomato, basil and garlic seasoning. And then I added the most exciting ingredient… Kale! I was determined to get some at the farmer's market this weekend and we got there as multiple stands started selling out. I nabbed a bag! I just massaged it with some olive oil and kosher salt for a few minutes until it was nice and bruised and doused it in lemon juice (too much salt and citrus, really, but that worked well with the rice and beans). Easy peasy. I didn't realize just how big a bag that was, I don't think I used quite half of it and there was a ton for Hubs and I! I'm thinking I'll try my hand at kale chips tomorrow :)

One of my best friends, who I haven't seen in over two years, emailed me the other day asking me about the blog. She wanted to know how I started eating healthy while sticking with a budget and in a very, very long reply, I decided to also make it into a blog page! Check out the new My Healthy Journey page! I'll be adding to it as I think of things and probably making things less convoluted as I go, for not its just copy and paste! Enjoy!

I finally bought some old fashioned oats at the store yesterday. I had half a can of pumpkin leftover from the waffles so I had planned breakfast before I even went to bed. I followed the directions on the back of the oatmeal subbing soy milk for half the water. I added maybe a quarter cup of pumpkin pie mix, cinnamon, ground ginger, cloves, and maybe two table spoons of brown sugar. It was good! The consistency of the oatmeal will take some getting used to, but it was better than that of quick cook oats. I'm predicting a repeat tomorrow morning :)

I had half a cupcake this morning. I was hoping to get a good picture of the ganache in the middle, but it looks like I didn't pick a very good one. Still tasty, even without the sugar in the cakes!

And dinner has been small because I'm still pretty full from lunch. I found this cereal in a discount cart at Kroger and might go back to buy more because its pretty good. Gets soggy very quickly though. I'd never buy it at the full price of $5, there are only 4 servings in a box!

I had the cereal in soy milk. I like that this is organic, but it is very vanilla-y. It was cheaper than Silk.

Hubs and I both wanted to buy popcorn at the store. I couldn't find a natural option of mini bags and he wanted to buy his own, so we just bought kernals so that we could each modify our own. We of course had to test it out:

I don't know why rotated pictures are too big when right side up. All I can do is apologize!

I had spinach that was about to be on its last leg so I made a small but thick smoothie last night before bed. I drank half this morning and will drink the other half tomorrow. No measurements but it contained spinach, nectarine, vanilla whey protein powder, vanilla soy milk, banana, and some water.

Today I tried a new peanut butter! Jif has a new natural style peanut butter. I didn't examine the ingredient list before buying though, it contains peanuts and sugar with less than 2% of salt and molasses. It was pretty good, not too salty, thankfully. And no stir!

For lunch I had some chili that I bought at the snack bar in the library. It was pretty tasty but having celery in the chili kind of threw me off! Sorry about no picture :/

I got home rather hungry so I had an oatmeal cookie

And maybe a serving of Greenwise wheat crackers. I just know I finished off the box, it seemed like right about a serving.

At Target last night I grabbed a bag of steam-in-the-bag veggies (Archer Farms), a harvest blend which is basically mushroom, carrots, brocc, sugar snap peas, water chestnuts, and onion. I made some brown rice and tossed it with teryaki sauce and some of the veggies. Hubby had some too and I have the leftovers packaged up for lunch tomorrow!

I think I've reset my camera to take smaller pictures, we'll find out tomorrow! I'm going to shower and make my way through another disk of Gossip Girl before Glee!
