Happy Saturday! I finally have pictures for you!

I managed not to sleep till 10:30 today (actually woke up soon after 8) and after rousing Hubs and a shower, we headed out for many adventures.

First off, breakfast, was Dunkin Donuts. I know Tina loves their iced coffee, and it was only 99 cents, so I figured I'd try one, without milk (you know, being lactose intolerant and all). As you can see, I got some sugar though! It was pretty good! The first few sips definitely had some crunch to them… I haven't consumed raw sugar in awhile, so it was a bit surprising, but I got over it :)

I also finally got to try their veggie egg white flat bread and definitely should have asked for no cheese (it all melted to the back end and I definitely didn't miss it). It was actually pretty tasty, if a bit disconcerting to have this perfectly formed triangle with bits of color mixed in. I could still taste some of the vegetables though, I like me some veggies though.

Next stop was the Farmer's Market! We slept through it last weekend but made a point of going to day. It was busy!!! And there were some new farmers who weren't there last fall. (I have no idea who any of these people are, but I bought from both of the vendors pictured, tomatoes and basil from the guy on the right edge and squash from the left most man (in the background). Both were very friendly, helpful, knowledgeable. There's one guy that I won't buy from because he spoke to me like I was an idiot at some point last year…

We came home with spring onions, baby potatoes, tomatoes, a bunch of basil, red butter lettuce (a huge head!), squash, and sugar snap peas for $19.

Funny story about the sugar snap peas… Hubs and I were talking while still scouting out the selection, he about how last time he had some they didn't sit well with him and I was just saying how I don't like them when one of the farmers that we like a lot came around his table and offered us a sample of some. These are so sweet! I've only ever bought them from the grocery store before and they never have any flavor. Now I see where they get their name… We continued our walk and then went right back to him, he asked whether he sold me and I said yup! (also bought the lettuce from him). See kids? It pays to buy local and organic, the flavor is so much richer!

The green squash is called clarimore and I've forgotten what he called the yellow zucchini. I can't seem to find the name online.

Each tomato is a different variety, which to some extent is a shame because I won't know what to look for next week.

Everything but the lettuce is smaller than you would find at the grocery store but the flavor is so much more intense because it hasn't been dulled with super plant food or pesticides, it all has the chance to soak up the real flavor of the earth. And the smaller, the sweeter, as the tomato guy and various websites as I was trying to find the squash names. You want them young and sweet. Seriously guys, check out your local farmers market. The food probably won't officially be labeled organic because the certification is often too expensive for small farmers to obtain, but just talk to them. The guy who sold me the sugar snap peas told me last year that everything is definitely organic at ours. Plus once something has come into season, the prices will be comparable to your big chain grocery store but the flavors will be twice as intense. You won't be disappointed.

Later, after Hubs cleaned the bathroom and I wrestled with trying to connect my computer to the cable modem (our wireless hub seems to have died), I bribed Hubs with lunch at Chickfila (not my best decision) because he had a coupon for a free sandwich (last time we went my wrap took forever to be made so the manager offered us two free sandwiches). The desire for better contact solution at the nearby CVS might have played a part in his willingness.

We've kind of been go-go-go all day. We came straight home and took the dogs on a walk! We kept it a lot shorter (still a good half hour probably) so other than getting tired, Gypsy stayed healthy (she's the grey one). I never realize how small she is until I see her in photos or am around other dogs.

Ignore my pointy hair, when I wear my bangs down I part it on the side it's not used to (does that make sense?) to hide a cowlick on the right side of my forehead (my right). I guess I didn't specifically smooth it down while I was blow drying it this morning.

(As a side note, the little bugger peed on me twice today. The first time I happened to be sitting on the floor when he was let out of the crate so it was an unfortunately typical I've-been-locked-up-and-I'm-so-excited-to-see-you sprinkle. We usually rush him straight out the door to avoid this. The second time he was quietly resting on my lap when he shifted and it suddenly got very warm. That one was unusual. Good news is, most of my jeans are now clean.)

After the walk, I got in touch with my mom and she tried to help me with the internet, to no avail. We ended up driving up to Best Buy to buy a new router (which works sooooo much better than the old one, hello streaming video!) and stopped by Target to buy Ollie a new leash. His old one was once Rose's (sigh) and technically pink. The clasp was also broken so he could wriggle away from me at times. Now he has a nice, manly blue.

I snacked on some hummus and Wheat Thins at some point (if you must know) and then Hubs and I made a farmers market dinner! Seriously, everything but the salad dressing, hummus, craisins, and the okra were bought this morning, meaning it was all picked within the last 48 hours. So, so fresh and flavorful!

For the dressing I made Ange's Better Than Bottled Balsamic vinaigrette but you know, I had to work with what we had, so I used red wine vinegar instead of apple cider vinegar, yellow mustard, and (I'm ashamed to say) Eggo syrup instead of real maple. It was still really good though! I doubled the recipe so I can have it on salads at lunch this week.

My salad had butter lettuce, a few pieces of onion, some sliced basil (this added so much!) a wonderfully fresh tomato, some red pepper hummus, and craisins. Basil is definitely my favorite herb. Please expect to see a vegan caprese salad sometime this week!

Hubs also roasted up two of our potatoes, one yellow zucchini, one clarimore squash, two onions, and some frozen okra (what can I say, he's obsessed). Seasoned with salt and oregano, I believe. The potatoes were softer and almost creamier than any I've had before (and free of pesticides! Very important as anyone who's read In Defense of Food will agree). The texture was smoother… I don't think of potatoes as being grainy, but they almost seem so in comparison with these.

Look at that beautiful yellow ring of flesh in the zucchini! Hubs and I both agreed that the flavor reminded us of tea! It was interesting, in a good way!

The squash was sweeter, and maybe just slightly nuttier? than regular squash. I couldn't quite decide what was different. I absolutely love summer squash though and I'm so excited that the season is arriving!

One disappointment was finding a much better option for breakfast when we arrived. There's a restaurant called Farm 255 who's mission statement begins with the lines:  Farm 255 is a restaurant that seeks to reconnect food to its roots & people to their food. We serve local, seasonal, & sustainable food for supper nightly. In addition to the Farm we manage Full Moon Farms, an organic/biodynamic animal and vegetable production farm in Athens.

Their menu changes daily, depending on what crops they are able to bring in from the farm. I love, love, love their food philosophy but they are quite out of our price range so I have yet to eat there. Maybe for my birthday! Hubs asked me what I wanted and I told him a nice dinner out…

But to get on with the story… at lunch time they have a small cart (called Farm Cart, of course) out of which they serve sandwiches (haven't had one of those either). As we were walking up to the farmer's market today I squealed with excitement "Farm Cart is here!", which quickly turned to disappointment when I realized that we'd just eaten (as in, had to sit for an extra minute in the car for me to finish eating). They weren't ever there last fall when we went, but I found them on Twitter and hopefully they will make it a regular thing. They had a good line today!

Okay, I know this has been a monster of a post, but I want to add one more thing. I can't wait until we move! Currently our options for walking the dogs is a 3/4 mile loop around the block or having to walk them under the highway. Neither of which is very appealing for anyone involved so we walk them a lot less than we should. Jack Russells are known for being hyper dogs, but Ollie has been so much better behaved today. He never sleeps in the middle of the day anymore, but he sat with me for a good half hour while I read (before watering my lap) and now he's lying on the couch beside me, hiding under a pillow (they're also diggers):

But once we move across town at the end of July we'll have sidewalks galore and new neighborhoods to explore. Plus the apartment complex has a dog play area, which will hopefully be fenced in by the time we move!

Today has been a really good day and I just had to share it with you! I know this has been terribly long, but I hope you enjoyed it!

Morning guys! I'm a little off schedule, our internet is out at the apartment, so I'm posting… from… class… Sshhh, I won't tell if you don't tell. But in any case, this will be another quick one.

For dinner I wanted veggies. We don't really have veggies, so Hubs sauteed up some red onion and a frozen gumbo mix, added some fire roasted red pepper and tomato sauce, and served it over pasta. Topped with lots and lots of nooch!

Aside from the few bites of celery which kind of threw off my tastebuds, it was really good! I love okra though. I like having a big mound of veggies and a slightly smaller heap of pasta.

Otherwise breakfasts have been a smoothie with two pieces of toast, lunches have been leftover couscous (today is the last). Shoulder still hurts, still avoiding exercise… I'm boring! And I should probably pay attention now :)

As I've mentioned before, my biggest exception to vegetarianism would be a good pulled pork sandwich. Which is why I agreed to try out a restaurant called Jot 'em Down with Hubs tonight. The first year we lived in Athens we passed by this building all the time on the way to Terry and Dan's apartment but it was a biker bar then. I don't know when it got changed but it definitely isn't now! Bamboo and antiques probably don't apply to the biker dudes as much.

We didn't get there until probably 8:00 (which is late for us!) and it was pretty empty.

As expected I ordered the pulled pork sandwich with slaw and beans as my sides. The plates come covered in wax paper, with a paper wrapped sandwich to hold the flat paper down. Seems strange, but it would certainly keep them cleaner! I worked at a barbque place in Atlanta for a month or two in high school and as wasteful as this method is, I can't really say I blame them, especially when you have a big enough table to warrant stacking plates up your arm… Oh Fat Matt's. How little I miss thee.

The meat comes dry and you have an option of six sauces to liven it up with, half vinegar based, half ketchup based to please those hailing from both North and South.

I chose the Cherokee Indian, which the website says is sweet ketchup based, but it tasted pretty much exactly like the Mild Elrod's mild vinegar. I think something got miss labeled. I was hoping for sweet but this was really good too!

The slaw was pretty bland, but the beans were quite good! Sweet but not sweet enough to be considered honey flavored. Hubs got the potato salad (perfect amount of vinegar) and brunswick stew as his sides and both of those were quite good. I love brunswick stew but didn't get much of a taste, he called it the best he's had though!

I'm thinking that if our dads and brothers come out to help us move in a few months that this is going to be where we take them to lunch. I know my dad would like it!

We had our second test in poli sci today which hopefully went a bit better than the first. The professor is fond of multiple choice questions where a) b) and c) are all very plausible, d) is "both a and c" (or some combination of two) and e) is "all of the above." So frustrating!!!

But we got out super early but I was scheduled to stay late at work so I had time to come home and take a nap. After 15 minutes and arriving nowhere near sleep I got up and just read my book though. It also means no reading for tonight! I had been hoping to get to bed early, but look at that I'm late again.

(As a side note, how about Neil Patrick Harris on Glee last night, huh?! Loved it!)

Still no exercise as my shoulder is still really painful. Hubs massaged it for me early and the pain went away for awhile, but it's come back again. If it's not significantly better tomorrow I'll be calling the doctor, though I don't know what she could do for me. Knowing my history, by the time I could even get in to see her the pain would be gone.

And no, I don't use my shoulder to run, but even having it hang at my side while walking is painful, so having it stabilize my arm during the more jarring motion of running just doesn't sound like a good idea. I've been eating very poorly the past few days (too many in office treats, too big a sweet tooth) but I'm trying not to get too down about it. It will all even out in the end.

Meet Tennyson…

My shoulder has been killing me today (like, seriously. I just wanted to go home take some prescription strength ibuprofen and sleep it off. Or find someone to call for emergency massage. Or acupuncture. ). Tennyson's an excellent masseuse, but it wears off quickly. I've also been bonding with my parents' old heating pad this evening… I honestly can't tell that there's been much improvement though.

Today my office had pizza with the head of the libraries and since nothing there (except the blackberries and strawberries) is anything I'd ever buy for myself to eat, I gave myself the go head, which turned into four pieces of mushroom pizza, some cookies, and the previously mentioned berries.

I only stopped myself from continuing by reminding myself that I probably won't be running the next few days. Needless to say, I wasn't very hungry for an afternoon snack.

Hello! I'm afraid I have a one-picture-post for you tonight.  I'm feeling rather rushed. Class ran long, which means I had to stay at work even later than usual I'd like and I still have about four pages left of reading to do before I can even thinking about reading for fun.

Dinner was just sort of my last 'quick and easy' meal that isn't what I'm eating for lunch all week. Trader Joe's Pav Bhaji.

I could actually only eat about half of it because it's super spicy. I can deal with it for awhile but then it starts to feel like it's actually doing some damage to my tongue. So for tonight I gave up. I think it would be wonderful with some plain Greek yogurt though. You know, if I were capable of having any 'just lying about.'

Today was a rest day, which is just as well since I've got all sorts of aches and pains going on. I skipped my three mile run yesterday because first my right hip was hurting me, then my back started twinging. My back is still twinging and the my left shoulder/neck got really really sore… I'm falling apart, I'm telling you. I've been spending some quality time with a tennis ball between my shoulder and the couch back and it has helped a lot.

I hate to run, but this semester is crazy!

Girl's night was a blast. Tasty Texas margaritas, garden quesadillas, chips and salsas, and some random movie called She's Out of My League, which had only one person I even recognized but was surprisingly amusing.

After sleeping too late to make it to the farmer's market I had my usual weekend/treat breakfast of two slices of whole wheat toast with smart balance and coconut oil (mmm, healthy fats)

Hubs and I walked the dogs up to Five Points and got ice coffee/tea (respectively), it was about 1.8 miles each way. My training plan called for just a half hour walk, which it probably was one way. We sat at the coffee shop to let the dogs cool off and then started to walk back. I ended up running the last mile at a pretty good clip… we'd pushed Gypsy too hard and she actually start peeing blood, so I ran back to get the car and go pick everyone else up. She was back to normal after dinner but is due for shot, so we'll probably get her checked out just in case. It would suck to lose both dogs to kidney problems within 6 months of each other.

As soon as we got home Hubs left to go play disc golf with the boys. My lunch was this:

You get 8 tickets which are supposed to buy you a quarter of a glass each, but the pours are more like half a glass. I only managed about four full glasses (half each of: Golden Ale, Sunray Wheat, Cap'n Krunkles (one of their side projects, a black IPA), and Hop Karma IPA).

After the brewery we headed back to Alex's place to watch the Braves lose and consume numerous pigs in a blanket. One of the few exceptions to my vegetarianism :) They were totally worth it.

Today started with more toast, some homework, and lunch was a cherry chocolate bomb smoothie with spinach:

Dinner was vegetarian couscous with the same substitutions as before, though I had enough green onions this time. I also double the spices and it was absolutely fabulous. I love the occasional bites of toasted almonds… I think next time I'll add more of those and more Craisins.

The best part about this recipe? Hubs and I both now have four lunches already made and packaged up for this week. Grab and go is so amazing.

Now I have a serious sweet tooth. I've had two cookies already and still want more. Maybe I'll grab some more Craisins…

Hubs suggested we go to Taqueria del Sol for dinner tonight, a favorite of the family's, I was so excited when they opened one here in Athens. And a guy I had a crush on in early high school is definitely a bar tender. Well we were just there last Friday, but there was a random black out and so we couldn't pay, much less tip. So we went back tonight to make good on the tip we promised.

I got a fish taco, which is breaded and fried tilapia with poblano tartar sauce and pickled jalapenos and a bowl of their refried beans. Love the fish tacos and the beans were pretty good too.

After dinner we headed to Jittery Joes (local coffee chain) because Hubs had a buy one get one free coupon we settled down to study for our test tomorrow (yup, fourth day of class), I got a peach iced tea for the caffeine and he got a turtle mocha. Well more of the mocha ended up on the book and my lap than in his belly, so that was cut short. I was sticky! I finished my tea though!

I'm going to be tiiiiiiired tomorrow. And I'm going out for girl's night so I won't be able to go to bed early, as my body will be asking for. I get margaritas though! The boys are playing poker, so I expect to be sleeping alone. Those games go on forever! In any case, you'll have to wait till saturday to hear from me again. "See" you then!

I'm even farther behind than yesterday! How do these things happen to me!?

In any case, I forgot to mention yesterday that I'm dropping back to the "novice" level of Hal Higdon's spring training plan. I realized that I was thinking of the intermediate plan as something to work up to, and realized that I had access to something that would get me there on its own. Plus the shorter runs are better for busy days and hot weather. This means I ran 1.5 mi yesterday and 3 today. Just to keep the record straight.

Dinner was simple. Take a sweet potato. Microwave it for 5 minutes. Turn it over. Microwave for 3 minutes.

Drain and rinse a can of beans. Pour some on top of sweet potato.

Voila.

I ended up adding some cajun seasoning and pulling the flesh from the skin while waiting on Hubs to finish cooking his own sweet potato. So things actually looked more like this:

Why hello there guys and gals. If you've actually stuck with me over the past few months I am eternally grateful! My schedule is even busier now than it was in spring semester,  but I'm going to try to bring blogging back into my life as a regular activity. A lot of my meals will be the same from day to day, so just posting dinners will make things a lot easier. Currently my days look like this:

  1. 4:55: alarm goes off. I hit snooze or "alarm 2" (set for 5:25) and lie in bed waiting to fall back asleep
  2. 4:58: I realize sleep ain't going to happen, get up.
  3. 5:00: In the shower
  4. 5:10: Out of the shower, dry, put on underwear, followed by makeup, hair, and clothes
  5. 5:25: Take dogs out
  6. 5:35: (yes, I'm a horrible doggie parent) Bring dogs in, feed dogs, put two slices of bread in toaster, make smoothie, spread peanut butter on toast
  7. 6:05: Put together food for the day while eat breakfast, then take breakfast upstairs and read blogs while I finish eating
  8. 6:30: brush teeth, head to work
  9. 6:55: check email, facebook, web comic of choice
  10. 7:00: begin opening
  11. 9:20: meet hubs and walk to class
  12. 9:30-12:15: sit in class, take notes…
  13. 12:25: say goodbye to hubs, return to desk, eat lunch, work
  14. 5:50: walk out of office
  15. 6:10: arrive home, exercise
  16. To be followed by a 5 minute, cold shower, dinner, blog, and homework, to hopefully have 15 minutes to read my "for fun" book and then bed.

So forgive me if I miss a day here or there.

But for this week, I will be eating peanut butter toast on whole wheat bread, as well as a spinach smoothie with half a banana, ovaltine, half a scoop of whey protein powder, and if I'm feeling indulgent some frozen cherries

Lunches will be a salad, mostly romaine, with some spring mix mixed in, and a raspberry vinaigrette I hate, but I'm too lazy to make a balsamic.

And tonight, which is unusual, we had Chickfila for dinner. This is the third time I've had chicken in 5 days. The second time that chicken has come from Chickfila. The other time it was kosher, though. If that means anything to anyone :) The excuse for tonight was that Hubs had a friend who would get money from the sales to put towards a mission trip.

Howdy friends! My apologies for the absence. I'm really into my books right now and not so much cooking, studying or blogging. My Google reader has been extremely neglected too. But I have not forgotten about you, friends!

My last attempt at food creativity was a good two weeks ago, when I attempted to modify and make Post Punk Kitchen's snobby joes. I remembered that I needed a can of tomato paste for it, but other than that it was loosely based.

These were still tasty, but not quite what the creator meant for them to be I would imagine. The biggest difference was subbing some of a bag of a frozen pepper and onion mix for the yellow onion and green pepper. It would have been so much better with fresh onion. That and my oregano expired. Oh and I forgot I was halving the recipe so it was a tad heavy on the tomato paste. More lycopene for me!

In any case, I'm back on the training wagon: pounded out a three mile run (without music! so refreshing) followed by level one of the Jillian's 30 Day Shred. I'm finally able to do all of the reps! Not saying I'm not making some rather unfeminine noises as I do so, but I'm doing it!

I'm done with my evening lab, so I'm going to see how it works as written. Tomorrow's the last day of class! Then I have a week and a half till the final… Can't I just get it over with?

I also really, really want to do this: Tri to Beat Cancer.

It's local and it would be my first! And since I'm taking classes I can use the school's pool for free to train for the 400 m swim. I just need to get another one piece and get my bike tuned up. And scrounge up $80 for the entrance fee…

And, its only two weeks after fall semester begins and my schedule gets insane. Can we say taper period? :D
